2 large eggs, slightly beaten
2 1/4 cups milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups bread cubes, cut 1 inch thick
1/2 cup brown sugar, firmly packed
1/2 cup raisins
Place a trivet in the crock pot; pour in 1/2 cup water. Combine ingredients in a 1 1/2 qt baking dish. Place dish on trivet in crock pot. Cover; cook on high for 2-3 hours.
For a variation, use cinnamon raisin bread cubes or other fruit bread.

I don't bake this in a baking dish I just put it in the crock and omit the water. The crockpot creates steam and keeps it very moist you don't need to do the additional step of putting it in the baking dish unless you are worried about presentation purposes. If you just cook it in the crockpot then you can just scoop it out but if you want to be able to set the baking dish on a table or something then you can do that method.
