Banana Bread Pudding

Bread pudding made from cubed banana bread is served with a rich vanilla sauce. When you have too many bananas, you make banana bread. So when you have too much banana bread, make banana bread pudding!

ingredients

4 cups banana bread, cubed
1/4 cup butter, melted
3 eggs
2 cups milk
1/2 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup sliced firm bananas

SAUCE

3 tablespoons butter
2 tablespoons sugar
1 tablespoon cornstarch
3/4 cup milk
1/4 cup light corn syrup
1 teaspoon vanilla extract

directions

Preheat the oven to 375 degrees F. Grease a 2-quart baking dish.

Combine the cubed banana bread and melted butter in the prepared baking dish. Toss well to coat the bread with the butter.

Add the eggs to a medium bowl and beat well. Beat in the milk, sugar, vanilla, cinnamon, nutmeg, and salt until blended. Gently stir in the bananas.

Pour the egg mixture over the bread cubes and gently stir to coat the bread.

Place the dish in the oven and bake at 375 degrees F for 40 minutes or until done in the middle.

Meanwhile, melt the butter for the sauce in a saucepan over medium heat. Combine the sugar and cornstarch in a small bowl. Stir into the melted butter until fairly smooth. Add the milk and corn syrup. Cook, stirring, over medium heat until the mixture comes to a boil. Boil hard for one minute without stirring.

Remove the pan from the heat and stir in the vanilla.

Serve the warm sauce over the warm bread pudding.
