Drunken Bread Pudding

ingredients
2 eggs
2/3 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
3 tablespoons melted butter or margarine
1 1/3 cup milk
1/4 cup coarsely chopped pecans or almonds, optional
1/4 cup raisins, optional
6 slices buttered, firm bread, cut into 1 inch cubes
brandy, to taste, optional
directions
Beat the eggs until frothy. Mix in the sugar, vanilla, cinnamon and butter. Beat until well blended. Stir in the milk and nuts and raisins, if used.
Stir the bread into the milk mixture. Toss until the bread is soaked. Let stand for 5 minutes, patting the bread down a few times.
Spoon into a 1 1/2 quart casserole. Bake at 325 degrees F for 30 minutes. Turn up heat to 425 degrees F and bake an additional 15 minutes.
Serve hot with a splash of brandy, if desired.
