ingredients
5 slices bacon
1 large onion, chopped
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 cup uncooked long-grain rice
1 can (16 ounce size) chopped whole tomatoes, undrained
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper
1/8 teaspoon hot sauce
directions
Cook bacon in a skillet until crisp. Remove bacon, reserving drippings, then crumble and set aside.
Add onion, celery and green pepper to drippings. Saute until vegetables are tender. Stir in rice and remaining ingredients.
Spoon into a lightly greased 1 1/2 quart baking dish. Cover and bake at 350 degrees F for 25 minutes or until rice is tender, stirring after 15 minutes.
