5 cups frozen shredded hash brown potatoes, thawed
1 can (10.75 ounce size) cheddar cheese soup, undiluted
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
2 pounds ground beef
1 medium onion, chopped
1 can (4 ounce size) mushroom stems and pieces, drained
1 can (15 ounce size) pizza sauce
4 cups shredded Italian-blend cheese, divided

directions

Preheat the oven to 400 degrees F. Grease a 15x10 baking pan.

In a bowl, mix together the shredded potatoes, cheese soup, egg, salt, and pepper until the potatoes are coated in the mixture. Spread the potato mixture evenly in the bottom of the prepared baking pan. Place the pan in the oven and bake at 400 degrees F for 20-25 minutes or until lightly browned.

While the potato crust is cooking, heat a skillet over medium heat. Add the ground beef, onion, and mushrooms. Cook, stirring, until the meat is no longer pink and the onion is soft. Drain off any excess grease.

Stir the pizza sauce into the beef mixture. Turn off the burner but leave the pan on the stove so the sauce heats through.

Remove the baking pan from the oven. Sprinkle half the cheese over the hot potato mixture. Spread the ground beef and sauce over the cheese. Sprinkle the remaining cheese over the beef.

Return the baking pan to the oven and let cook at 400 degrees F for 5-10 more minute or until the cheese is melted.

Remove from the oven and serve hot.

    This was very good, I used half a bag of frozen Potatoes O'Brien, a can of cream of mushroom soup, 2 eggs, and skipped the mushrooms since my kids won't eat them. They were a hit! Really yummy.
