Slow Cooker Mexican Black Eyed Peas

ingredients
1 onion, chopped
1 bell pepper, chopped
1 cup chopped celery
4 cans (15 ounce size) black eyed peas, rinsed and drained
1 can (15 ounce size) diced tomatoes, undrained
1 1/2 teaspoon garlic salt
1 tablespoon chili powder
2 tablespoons brown sugar
salt & pepper
directions
Heat a small amount of oil in a skillet over medium heat. Add the onion, bell pepper, and celery. Saute for 5 minutes or until the vegetables begin to soften.
Add the vegetables to the crock pot along with the black-eyed peas, tomatoes, garlic salt, chili powder, and brown sugar. Stir well.
Cover the crock pot and cook on low heat for 2 hours. If the mixture looks dry, add some water or broth.
Season to taste with salt and pepper before serving.
