ingredients
1/4 cup olive oil
1 diced sweet green pepper
2 carrots, peeled and cut into rounds
2 cups chopped cauliflower florets
1 cup chopped mushroom
2 cloves garlic, minced
1 cup bottled chili sauce
2 chopped fresh tomatoes
1 can (6.5 ounce size) flaked tuna, drained
1/2 cup sweet pickled onions, chopped
1/2 cup stuffed green olives, chopped
1 teaspoon Tabasco pepper sauce
directions
Heat oil in large non-aluminum saucepan over medium heat. Add green pepper, carrots, cauliflower, mushroom and garlic. Cook, stirring occasionally, for eight to 10 minutes. add chili sauce, tomatoes, tuna, onions and olives.
Simmer 10 to 15 minutes, stirring constantly, until slightly thickened. Stir in Tabasco. Transfer to storage container and chill in refrigerator.
Serve with your choice of crackers. To keep for longer than a week, seal in sterilized mason jars.
