ingredients
1 package pound cake mix, plus ingredients to prepare
1/4 cup packed brown sugar
1 tablespoon flour
1/4 cup finely chopped nuts (walnuts or pecans)
1 teaspoon ground cinnamon

Grease and flour a 2-lb metal coffee can or loaf pan that fits inside your crock pot.
In a bowl, prepare the cake mix batter as directed on package (adding eggs, oil, and water as called for). Pour the batter into the prepared container.
In a small bowl, combine the brown sugar, flour, nuts, and cinnamon. Sprinkle evenly over the cake batter.
Place the cake in the crock pot. Cover with several layers of paper towels (to absorb the moisture). Cover the crock pot and cook on high heat for 3-4 hours or until the cake tests done with a toothpick.
Remove from the crock pot and let cool in the container for 5 minutes then turn out onto a cooling rack. Let cool completely before slicing. Store the cake in an airtight container.

The hardest part about this recipe was having to buy a can of preground coffee just for the can! It turned out very good but I did turn the heat down to low after 2 hours because I was afraid it would overcook. I then cooked it for 3 more hours on low and it was just like oven baked.
