ingredients
1 cup butter or margarine
1/2 cup vegetable shortening
1 package (16 ounce size) brown sugar
5 large eggs
3 cups all-purpose flour, divided use
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup milk
2 cups pecans, chopped
2 teaspoons vanilla extract
directions
Preheat oven to 350 degrees F.
Cream together butter, shortening and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
Combine 2 1/2 cups flour, baking powder and baking soda. Add to the creamed mixture alternately with milk, mixing well after each addition.
Dust chopped pecans with 1/2 cup flour, then fold into the batter with vanilla. Pour into a greased and floured tube pan. Bake for 1 hour and 10 minutes, or until the center is set.
Cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
