ingredients
2 1/4 cups flour
2 cups sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
1 cup butter, softened
1 carton (8 ounce size) pineapple yogurt
3 eggs
1 can (8 ounce size) crushed pineapple, well drained
GLAZE
1 cup powdered sugar, sifted
2 tablespoons lemon juice
directions
In a large mixer bowl, dump all cake ingredients. Blend at low speed; then beat at medium speed for 3 minutes.
Pour into a greased and floured 10 inch tube pan. Bake at 325 degrees F for 60-65 minutes. Cool 15 minutes, then remove from pan. Cool completely. Drizzle with glaze.
GLAZE: Combine all ingredients and beat until smooth.
