Don't be scared, this dip is delicious! The olives should provide enough salt but feel free to add any other seasonings as desired. For fun, try serving this dip in a large bell pepper, Jack o' lantern style.

1 can (15 ounce size) black beans, rinsed and drained
1 can (15 ounce size) pitted black olives, drained
2 teaspoons lemon juice
1/2 roasted red pepper, fresh or jarred, well drained if jarred
Combine the beans, olives, lemon juice, and roasted pepper in a blender or food processor. Puree until desired consistency.
Serve with your favorite dippers (pita bread wedges or potato chips go great with this).

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
