Make up this spice mix ahead of time to have on hand. It works great with a variety of pickled foods and has a spicy warm flavor to it.

2 tablespoons whole mustard seed
1 tablespoon whole allspice
2 teaspoons black peppercorns
2 teaspoons whole cloves
1 teaspoon ground ginger
1 teaspoon hot crushed red pepper flakes
2 small bay leaves, crushed
1 piece (2 inch size) cinnamon stick, broken in pieces
1 teaspoon ground cardamom
Combine all the spices and mix well. Store in an airtight jar for up to 6 months.
You can adjust the ingredients as needed. Use wherever pickling spice is called for in recipes.
