2 pounds lentils
water, pre-heated
3 chipotle peppers, stems removed
5 cloves garlic, crushed
1 onion, large, chopped
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon dried basil
1 can (28 ounce size) crushed tomatoes
1 can (6 ounce size) tomato paste
1 pound frozen corn kernels
1 cup bell pepper, diced

directions

Begin by pre-heating 6 cups of water to boiling and pour into the slow cooker which is set on "high."

Clean and rinse the lentils. Add to the Crock Pot.

Place the chipotle peppers in a blender container with 1 cup of water. Peel the garlic and add to the blender. Cover and run blender at high speed until the peppers and garlic are pureed.

Heat this mixture in microwave oven to boiling. (This may also be heated on the stovetop.) Pour the contents of the blender container into a heat resistant pot or bowl, rinse the blender container with another cup of water, and heat the liquid to boiling. Add to the crock pot.

Peel and dice the onions, wash and dice the bell pepper, and add to the crock pot.

Heat the frozen corn with the crushed tomatoes and tomato paste until hot, and add to the crock pot. Add the seasoning. If you are leaving the crock pot unattended, we suggest lowering the heat setting to "low."

If you prefer your lentil chili more like a soup (thinner), add additional hot water, as desired.

Serve with a large tossed salad and enjoy!

    This is a really great recipe. I actually used the canned Chipotle chilis in Adobo sauce and it came out great. It's nice to discover another way to use lentils because they are so healthy and more digestive friendly. I will definitely keep this recipe around.
