1 cup onion, chopped
2 tart apples, peeled, cored & sliced
1 cup jellied cranberry sauce
1/2 cup dark raisins
1 tablespoon apple cider vinegar
1 tablespoon packed brown sugar
2 skinless chicken breast halves
1/4 teaspoon salt, optional
1 teaspoon dried thyme
1/4 teaspoon black pepper
10 ounces egg noodles

directions

In bottom of large crock pot, combine onion, apples, cranberry sauce, raisins, vinegar, and brown sugar. Stir to mix well. Sprinkle chicken with salt, if desired, thyme, and pepper. Add to crock pot on top of fruit mixture. Cover and cook on high 1 hour. Stir chicken into sauce.

Reduce heat to low. Cook an additional 4 to 5 hours or until apples are tender and chicken is cooked.

TO SERVE: Cook noodles according to package directions. While noodles are cooking, remove chicken and cut into slices. Arrange noodles on serving platter and top with chicken. Spoon sauce and fruit over all.

    I don't normally like sweet ingredients mixed with savory but this was good. It wasn't overly sweet but rather kind of tangy. I used boneless chicken thighs instead of white meat which can dry out. I also used more than the equivalent of 2 breast halves abecause I wanted it meatier. I think I woul dhave liked it over rice more than noodles but the noodles were ok.

    This is June and cranberries are out of season, could not get frozen or fresh, tried recipe with dried. Not a good idea. No taste and very dry, to the point of being overcooked. Will try another time with correct ingredients.
