Using instant ramen in stir-fry is smart, but using it in crockpot Asian cooking is downright brilliant. Those humble ramen packets never had it so good, surrounded by a teriyaki ginger broth and fresh snap peas.

serves/makes:

ready in:
  over 5 hrs

ingredients

2 packages (3 ounce size) Oriental-flavor ramen noodle soup mix
1 1/4 pound boneless, skinless chicken thighs, cut into 1 inch pieces
2 cups baby carrots, or sliced carrots
1 medium red bell pepper, seeded and chopped
1 teaspoon finely chopped fresh ginger
2 1/2 cups water
2 tablespoons teriyaki baste and glaze
8 ounces fresh sugar snap pea pods

directions

Combine the flavor packet from the noodles, chicken, carrots, bell pepper, ginger, water, and teriyaki glaze in the crock pot. Cover and cook on low heat for 4 hours.

Break up the ramen noodles and add to the crock pot along with the snap peas. Stir well. Turn the crock pot to high heat and cook for 15-20 more minutes or until the noodles are tender.

Serve the crock pot Asian chicken and noodles immediately.

crock pot notes

Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.

recipe tips

For added flavor, marinate the chicken in some teriyaki sauce before adding it to the crock pot.

If you prefer a thicker sauce, mix a cornstarch slurry and stir it into the crock pot during the last 30 minutes of cooking.

To make this dish spicier, add some sriracha or crushed red pepper flakes when adding the noodles.

Garnish with sliced green onions, chopped peanuts, or sesame seeds for extra flavor.
