ingredients
1 pound ground beef
1 can (28 ounce size) diced tomatoes, undrained
1 cup long-grain rice, uncooked
1 medium green bell pepper, chopped
1 small onion, chopped
8 ounces American cheese slices
directions
Brown the ground beef in a large skillet on medium-high heat. Drain off grease.
Stir in the tomatoes with their liquid, rice, green pepper and onion. Cover and reduce heat to medium-low. Simmer 25 minutes, stirring occasionally.
Top mixture with cheese and continue cooking, covered, until cheese is melted.

This simple dish was a family favorite for years. The recipe was forgotten and misplaced. So glad to find it again as is my husband. He loves rice dishes.
