12 eggs 3/4 cup skim or 1% low-fat milk 1 teaspoon salt 1/4 teaspoon black pepper
directions
Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.
Whisk together the eggs, milk, salt, and pepper in a bowl, mixing until uniform in color. Pour the egg mixture into the greased baking dish.
Place the eggs in the oven and bake at 350 degrees F and bake for 7 minutes. Gently stir the set bottom of the egg mixture so it forms large curds. Bake for an additional 12-15 minutes, gently scraping the bottom of the pan once or twice more during the cooking time.
Remove the oven-scrambled eggs from the oven when set and no liquid remains. Serve hot.

My cooktop died. Dead, done, gone. I tried making breakfast eggs in the microwave but haven't had luck (did you know they explode quite easily in there?). Tried this oven version and let me just say THANK YOU! Finally some good eggs without my cooktop. Getting the new cooktop in a few days but I'll probably keep using this recipe.

I originally thought this is a silly amount of work for scrambled eggs but I was curious so I tried it. I liked the texture better than eggs made in a pan. It was more custardy or something. I added in a few extra herbs and I think some chopped bacon mixed in would be good too. Or ham.
