1 cup diced cooked ham
1 can (2 ounce size) mushrooms, drained
1/4 cup chopped onion
2 tablespoons butter
8 eggs
1/3 cup milk
In a 10" skillet cook ham, mushrooms and onion in butter over medium heat about 5 minutes or until vegetables are tender. Beat together eggs, milk, 1/4 tsp. salt and a dash of pepper. Add to skillet. Cook without stirring until mixture begins to set on the bottom and around the edges.
Stir and continue cooking about 4 minutes or until eggs are cooked throughout but are still glossy and moist. Serve immediately.
