Cajun Fried Shrimp

ingredients
12 large shrimp
Cajun seasoning
2 cups canola oil
1 cup buttermilk
1 cup milk
2 large eggs
1/2 pound yellow cornmeal
1/2 pound all-purpose flour
directions
Peel shrimp leaving tail and one section of shell on shrimp. De-vein shrimp by slicing them halfway through the back and remove vein. Rinse shrimp after de-veining. Open to form butterfly.
Beat eggs and milk together. Add buttermilk. Mix well. combine yellow cornmeal and flour. Coat shrimp with Cajun spice. Dip shrimp in egg and milk mixture. Bread shrimp with cornmeal and flour mixture.
Heat canola oil in medium frying pan. When oil reaches 350 degrees F, fry shrimp for about 3 to 5 minutes until golden brown.

Cut the batter in half (or use it to fry onion rings to serve with the shrimp!). Good recipe, just needs adjustment.

Aside from the fact that you end up with so much breading mixture you could make this recipe 5 times, it's really good. You do not need 2 cups of liquid for only 12 shrimp - and 12 shrimp, do not feed four people. I made this for two people so it was enough shrimp for us (served with other dishes of course) but keep that in mind that you could easily use 1 1/2 pounds of shrimp with the amount of batter here.
