2 cups cooked long grain converted rice
3 cups peeled and grated carrots
2 cups grated sharp processed cheese
1/2 cup milk
2 eggs, beaten
2 tablespoons chopped onion
1 teaspoon salt
1/4 teaspoon black pepper

directions

Grease the inside of the crock pot.

Combine the cooked rice, grated carrots, cheese, milk, eggs, onion, salt, and pepper in the crock pot. Stir gently to combine.

Cover the crock pot and cook on low heat for 3 hours or until the cheese is melted and the carrots are soft. Stir before serving.

    i sautee the onion and carrots until the carrots are starting to get soft i then put everything minus the rice into the crockpot and cook on high for 2 hours then stir in the cooked rice and heat for another 30 minutes and that works pretty well.

    I omit the carrots and cook this on low for about 5 hours otherwise the rice turns to mush.
