ingredients
1 large onion, diced
2 tablespoons butter or margarine
2 cups cooked rice
2 eggs, beaten
1 cup milk
1 cup shredded Swiss cheese
1/4 teaspoon salt
pepper, to taste
Garnish
chopped parsley
paprika
directions
Preheat oven to 375 degrees F.
In a large skillet, saute the onion in the butter until golden.
In a large bowl, mix the sauteed onion with the remaining ingredients, except garnish. Pour the mixture into a greased 1-1/2 quart baking dish and bake for 20 to 25 minutes or until lightly golden and heated through.
Garnish with chopped parsley and paprika.
