3 tablespoons vegetable oil
3 tablespoons lemon juice
2 teaspoons finely chopped garlic
1/4 teaspoon ground ginger
1/4 teaspoon freshly ground black pepper
2 fresh Bartlett pears, diced
3 1/2 cups cooked brown rice
1/2 cup green onions, sliced
1/2 cup carrots, grated
1/2 cup celery, thinly sliced
directions
Combine first 5 ingredients. Toss with pears; reserve.
Combine rice and remaining ingredients. Gently fold in pears. Chill.
