ingredients

1 1/8 cup warm water
3 tablespoons butter, at room temperature
1 1/2 tablespoon honey
1/3 teaspoon salt
3/4 cup 12 grain flour
2 1/4 cups whole wheat flour
1 1/2 teaspoon bread machine yeast

directions

Add all the ingredients to the bread machine in the order recommended by your machine manufacturer. Use the whole wheat bake cycle with a light or medium crust.

When the bake cycle is complete, remove the pan from the machine and let it cool on a rack for 5-10 minutes. Then, remove the bread from the pan and let it cool completely on the wire rack before slicing or storing.

Store the bread in an airtight container for up to 5 days at room temperature (or freeze it for up to 1 month).

recipe tips

Try different sweeteners like maple syrup or molasses for different flavors.

If using nuts or seeds, toast them first to boost their flavor.

Try brushing the bread with melted butter or honey after baking for a shiny crust and extra flavor.

Adjust the sweetness level by increasing or decreasing the amount of honey.

It's easy to make 12 grain flour. Go to a bulk food store and buy about a cup of 12 different types of seeds/grain - include wheat, rye, millet, rolled oats, sunflower, flax and 6 others. Buy an electric coffee/spice grinder. Add about 1 tbsp of each seed to the grinder and grind to a fine powder. Do another batch if required. Presto 12 grain flower.

The recipe looks great but where can I buy 12-grain flour. King Arthur says it is not available for sale at this time and the only other places I've found are Canadian and they wont ship to south Texas. Does anyone know how to make their own 12-grain flour?
