Lentils
Lentils are a small legume originally from Asia. They are rich in iron and phosphorus and have calcium and Vitamin A. They are also a good source of protein.
Unlike other legumes, they don't need to be soaked prior to cooking. Simply rinse (and pick over) and use as directed in your favorite recipes. You can also purchase canned lentils, but since the dried kind cooks so easily there isn't any real benefit. And they can be stored at room temperature for up to a year.
