Slow Cooker Lentils With Chorizo

ingredients
1 cup lentils
3 cups chicken broth
1 bay leaf
1 teaspoon olive oil
1 medium onion, chopped
3 cloves garlic, crushed
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
2 roma tomatoes, diced
8 slices bacon, chopped
5 ounces ground chorizo sausage
salt and pepper
directions
Combine the lentils, broth, and bay leaf in the crock pot. Cover and set on high heat while you prepare the remaining ingredients.
Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until the onion is soft but not browned.
Add the bell peppers and and tomatoes cook, stirring, until they begin to soften. Add the vegetable mixture to the crock pot with the lentils.
Return the skillet to the heat and add the bacon. Cook, stirring, until the bacon is browned. Remove with a slotted spoon to paper towels to drain.
Add the chorizo to the skillet and cook until browned. Drain excess grease and add the chorizo and bacon to the crock pot.
Stir well then cover the crock pot and cook on high heat for one hour. Reduce heat to low and cook 30 more minutes or until the lentils are tender.
Adjust seasoning as desired with salt and pepper to taste.
