ingredients
1/2 pound bulk sausage, crumbled
2 tablespoons olive oil
1 medium onion, chopped
1 small jalapeno, finely chopped
4 cloves garlic, minced
1 can (15 ounce size) black beans, lightly drained
1 tablespoon cumin
1 tablespoon fresh lime juice
1 teaspoon dried oregano
2 cups cooked white rice
1/2 cup chicken stock (or low-sodium broth)
1 cup chopped fresh tomato
1/2 cup chopped fresh cilantro
directions
Brown sausage in a large skillet over medium heat. Remove sausage with a slotted spoon and reserve.
Add oil to skillet and saute onion 5 minutes. Add jalapeno and saute 2 minutes more. Add garlic and cook another minute before adding next four ingredients. Mix well.
Add rice and stock and stir to combine. When mixture is heated through, taste for salt and pepper and serve topped with tomato and cilantro.
