Slow Cooker Black Beans & Rice

This is a flavorful beans and rice dish. It starts with canned black beans in the crock pot combined with lots of herbs and spices. The rice is added at the end to keep it from getting overcooked.

ingredients

1 medium onion, chopped
3 carrots, thinly sliced
2 stalks celery, thinly sliced
4 cloves garlic, minced
1/2 teaspoon ground cumin
1 1/2 teaspoon dried basil
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon Tabasco sauce
2 cans (15 ounce size) black beans, drained and rinsed
1 can (14.5 ounce size) crushed tomatoes, undrained
2 cans (15 ounce size) vegetable broth
1 1/2 cup cooked rice

directions

Combine everything in the crock pot except the cooked rice. Cover the crock pot and cook on low heat for 4-6 hours or until the beans are heated through.

Stir in the cooked rice and cook for 20-30 minutes longer. Stir well then serve hot.

    I made this recipe exactly as is. I was a bit hesitant about the measurements of the spices, especially the chili powder and the cumin. I believe the measurements are wrong and instead of a teaspoon , maybe it should have been a tablespoon? I made this according to recipe for 8 servings. It was very bland with just the teaspoon measurements. It also resembled the consistency of a soup instead of a saucy beans and rice dish. The recipe called for 1 1/2 cups of rice. I had to put in 6 cups of rice to get the consistency i expected. I hope this helps others that want to try this recipe so they can make adjustments to suit their individual taste.
