ingredients
4 large sweet potatoes
1/4 cup evaporated milk
2 teaspoons vanilla extract
1/2 cup butter, melted
3 eggs, beaten
1 1/2 cup sugar
1 can (8 ounce size) crushed pineapple, drained
1 unbaked pie shell (9-inch)
directions
Boil sweet potatoes in clear water until tender. Peel potatoes while warm, put into a large bowl and mash.
Preheat oven to 350 degrees F. To mashed potatoes, add remainder of ingredients except pie crust and stir well. Pour into unbaked pie crust. Bake for 45 minutes until light brown.
