Sweet potatoes are a popular root vegetable that can be enjoyed in many different ways. This simple sweet potato pie is perfect for a Thanksgiving feast

1 cup cooked mashed sweet potatoes
1 teaspoon vanilla extract
1/2 stick melted margarine
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup egg substitute
1 dash salt
1 dash ground cinnamon
1 dash ground nutmeg
1 unbaked 9-inch pie crust
Preheat oven to 400 degrees F.
In a mixing bowl, combine the sweet potatoes, vanilla, margarine, white sugar, brown sugar, egg substitute, salt, cinnamon, and nutmeg. Beat on low speed with an electric mixer until well mixed.
Transfer the sweet potato filling to the pie crust. Place in the oven and bake at 400 degrees F for 12 minutes. Reduce the oven temperature to 350 degrees and continue baking for 30-40 minutes, or until set in the middle.
Serve the pie warm or chilled with whipped cream or vanilla ice cream. Store leftovers in the refrigerator.
