A bit crunchy, a bit creamy, a bit sweet - there's something a bit perfect about a proper Waldorf salad, isn't there? Toasting those walnuts before chopping and sprinkling them over the salad makes a surprisingly big difference.
serves/makes:
ready in: 30-60 minutes
ingredients
6 pounds eating apples 1/2 cup lemon juice 2 pounds celery, diced 6 heads lettuce 1 pint fruit salad dressing 2 cups whipping cream 2 cups nuts (chopped) raisins, optional
directions
Wash but do not peel apples (choose firm flavorful apples). Dice in 1/2 inch pieces and marinate in lemon juice. Cut celery in 1/3 inch pieces. Whip cream and fold into dressing.
Mix apples and celery with half the dressing mix just before serving. Place dipper of salad on lettuce leaf and garnish with teaspoon of dressing. Sprinkle chopped nuts over top of each salad.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

What the heck is fruit salad dressing? I'd love to make this recipe but don't have a clue what that is.
I've seen it with other salad dressings at the grocery store. Typically it's with the refrigerated kind that's usually in the produce section.
