Frog-Eye Salad

Named for the tiny pasta, acini de pepe, that looks like frog eyes, this chilled pasta salad is combined with a variety of fruits, whipped topping, and marshmallows.

ingredients

1 cup sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt, divided use
1 3/4 cup pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon oil
1 package (16 ounce size) Acini de Pepe pasta
3 cans (11 ounce size) mandarin oranges, drained
1 jar (9 ounce size) maraschino cherries, drained and cherries cut in half
1 can (20 ounce size) crushed pineapple, drained
1 can (20 ounce size) pineapple chunks, drained
1 container (9 ounce size) frozen non-dairy whipped topping, thawed
1 cup miniature marshmallows

directions

Combine the sugar, flour, and 1/2 teaspoon of the salt in a small saucepan over medium heat. Whisk in the pineapple juice and eggs. Cook, whisking constantly, until the mixture thickens. Stir in the lemon juice then remove the pan from the heat and let it cool to room temperature.

In a large saucepan, bring the water, oil, and remaining salt to a boil over medium-high heat. Add the pasta and cook at a rolling boil for 8-10 minutes or until the pasta is cooked. Drain the pasta, rinse under cool water, then let cool to room temperature in the pan.

Combine the cooled egg mixture and pasta. Mix well then place in a covered container. Refrigerate overnight.

The next day, stir the remaining ingredients into the pasta mixture. Mix well then serve immediately.

    I have used this recipe for years and it is always good. When I take this salad to a potluck, I always come home with an empty container! Don't let the name fool you, it is an awesome salad.
