3 chicken breast halves
1/4 cup cooking oil
1 can (8 ounce size) crushed pineapple
1/3 cup lemon juice
1/4 cup corn syrup
2 tablespoons soy sauce
1/4 teaspoon black pepper
1/4 teaspoon ground ginger
directions
Preheat the oven to 375 degrees F.
Place the chicken in a shallow baking dish or on a rimmed baking sheet.
In a bowl, stir together the oil, pineapple, lemon juice, corn syrup, soy sauce, pepper, and ginger. Mix well then brush the chicken with the pineapple mixture.
Place the pan in the oven and bake at 375 degrees F for 55 minutes, turning the chicken pieces once. Cook until the chicken is browned and cooked through.
Serve with rice pilaf.
