ingredients
1 cup butter, softened
5 eggs, separated
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup chopped nuts
2 cups sugar
2 cups flour
1 cup buttermilk
1 small can coconut
FROSTING
1 package (8 ounce size) cream cheese, softened
1 pound powdered sugar
1/2 cup butter, softened
1 cup chopped nuts
directions
Cream butter and sugar, beating until mixture is smooth. Add egg yolks, and beat well. Combine flour and baking soda. Add to creamed mixture, alternating with buttermilk. Stir in vanilla. Add coconut and nuts.
Beat egg whites until stiff; fold into batter.
Pour batter into three greased and floured eight-inch cake pans. Bake at 350 degrees F for 25 minutes. Cool, then frost.
For Frosting: Cream together cream cheese, powdered sugar, butter and nuts.
Spread a thin layer of frosting between cake layers. Use remaining frosting on the outside of the cake.
