2 1/4 cups reduced fat baking mix, like Bisquick
3 tablespoons granular sugar substitute like splenda
2/3 cup skim milk
3 tablespoons applesauce
1 quart fresh strawberries, cleaned and sliced
8 tablespoons fat-free whipped topping

directions

Grease the inside of the crock pot or grease a cake pan that fits inside the crock pot.

Heat the crock pot to high heat while you prepare the dough.

In a bowl, combine the baking mix, sweetener, milk, and applesauce. Mix until it forms a dough.

Press the dough into the prepared crock pot or cake pan. If using a cake pan, place it in the crock pot.

Cover the crock pot and cook on high heat for 1 1/4 hours or until the shortcake is baked and tests done with a toothpick.

Meanwhile, place the strawberries in a bowl and sprinkle as desired with the sweetener. Coat them well then set aside while the shortcake bakes.

Remove the baked shortcake from the crock pot. If not using a cake pan, run a knife around the inside of the crock pot to loosen the cake, then invert the crock pot onto a plate to remove the cake.

Place the cake on a plate. Evenly spoon the strawberries on the shortcake and then top with the whipped cream. Serve immediately.
