The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

Everyone loves a good cheesy calzone, but they're a little messy to serve as party food. Until now. Mini puff-pastry calzones make for phenomenal finger food.

1/2 package (17.3 ounce size) frozen puff pastry sheets
1 tablespoon olive oil
1 small onion, chopped
1 package (10 ounce size) frozen chopped spinach, thawed and squeezed dry
1/2 cup crumbled Feta cheese (plain or flavored)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Thaw pastry sheet at room temperature for 30 minutes. Preheat oven to 400 degrees F
In a large skillet, heat oil until hot. Add onion; cook and stir about 5 minutes or until tender. Add spinach; cook about 4 minutes, until flavors are well blended. Spoon into a small bowl. Stir in Feta cheese, salt and pepper.
Unfold pastry on a lightly floured surface. Roll to make a 12 x 12-inch square.
Cut pastry into four 3-inch strips; cut each strip to make four 3-inch squares. Spoon 1 rounded tablespoon of spinach mixture into center of each square; brush edges lightly with water and fold over to form a triangle; press edges to seal.
Place triangles on an ungreased baking sheet, about 2 inches apart. Bake about 15 minutes, until puffed and golden.

It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Delicious recipe and using the puff pastry worked great! We made them exactly as directed but under-baked by about 5 minutes. We let them cool and stored in the freezer. When we were ready for them we put them right from the freezer into a 450F oven for 10 minutes. They were a nice golden brown and heated through. Great way to make ahead! Make sure you get all the liquid out of the spinach or the pastry could get soggy.
