Make this restaurant-worthy appetizer in your own kitchen. A parmesan, egg and flour batter gives the mushrooms that perfectly crispy golden-brown fry. Serve with some herb aioli for a real treat.
1 cup flour
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1 dash garlic powder
1 cup cold water
2 tablespoons shortening, melted
1 egg, slightly beaten
2 cups fresh mushrooms, sliced 1/4 inch thick
shortening for deep frying
In mixing bowl, combine the flour, cheese, salt, and garlic powder. Stir in the water, melted shortening, and egg; beat till smooth. Pat the mushrooms dry.
Dip mushrooms into batter. Fry, a few mushrooms at a time, in shortening heated to 365 degrees F. Fry till mushrooms are golden, about 3 minutes, turning once. Drain on paper toweling. Salt lightly and serve immediately.
To ensure nice, crispy, light mushrooms make sure the oil is at the proper temperature before dropping mushrooms in. Otherwise they will soak up oil and be greasy and heavy.

This recipe is great. I substituted 2 tbs of butter for shortening in the batter. Peanut oil in deep fryer for 3.5 minutes. Next time garlic salt substitute. My wife couldn't stop eating them. Thank you.
Can you use cooking oil instead of shortning?
You can use oil instead of shortening, they may end up more greasy though
Can I substitute something for the Parmesan cheese? I really wanna make this, but unfortunately don't have any Parmesan and really don't wanna go to the store lol

The complex flavors involved in the conversion process that takes place when the liquid releases is amazing. 60 years ago, my grandma used to send me out to our secret location to collect the once per year crop of wild Morel mushrooms to fry. There's just no way to describe their incredible flavor!

I tried this recipe and absolutely loved it. I added a sprinkling of sugar to the batter. The parmesan give this batter a very nice taste. The mushroom batter was thick and fried nice and golden. My family thought that they were very delicious. This recipe was simple and easy to make. I will add to my book of favorite recipes.

I cooked the mushrooms and my husbandand I loved them. We went to Dinner and ordered them from a menu and was disappointed by thier mushrooms! these arevery tasty!!!!!
