These crispy baked artichoke balls are the perfect appetizer or side dish. They are easy to make and can be served with a variety of dipping sauces. You will love their crispy exterior and tender interior.
1 can (8 ounce size) artichoke hearts
1 tablespoon olive oil
1 clove garlic, minced
1 egg, beaten
1/4 cup grated Parmesan cheese
1/2 cup seasoned Italian bread crumbs
Drain the artichoke hearts and place them in a food processor. Pulse process until they are mashed.
Heat the oil in a saucepan over medium heat. Add the garlic and cook, stirring frequently, until soft and fragrant. Quickly stir in the egg and mashed artichoke. Reduce the heat to low and cook for 5 minutes, stirring constantly.
Remove the pan from the heat. Stir in the Parmesan and half of the breadcrumbs.
Using a small spoon, form the artichoke mixture into small balls. Roll them in the remaining breadcrumbs and place on a plate. Chill the artichoke balls for 2 hours.
Preheat the oven to 350 degrees F.
Transfer the artichoke balls to a baking sheet and place in the oven. Bake at 350 degrees F for 12-15 minutes or until light golden brown and heated through.
Serve hot.
