ingredients
1/2 cup butter or margarine
3/4 cup sugar
1/2 pound pitted dates, chopped
1 egg, well beaten
1 tablespoon milk
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups crisped rice cereal
toasted coconut
directions
Melt in a saucepan the butter or margarine. Add sugar and mix well. Add pitted dates and mix well. Bring to a boil, stirring constantly. Remove from heat and set aside.
In a mixing bowl, combine egg, milk, vanilla, and salt. Mix well. Stir into date mixture. Boil for 2 minutes, stirring constantly. Set aside to cool, but do not allow to get cold.
When cool, add cereal and mix well. Shape into balls about the size of a walnut. Roll into toasted coconut.
Place on cookie sheets that have been lined with wax paper. Refrigerate until ready to use.
