An easy version of the popular Archway brand cookies that uses a lemon cake mix for the base.
1/3 cup margarine or butter, softened
1 package (18.25 ounce size) lemon cake mix
1 container lemon frosting
1/3 cup shortening
1 egg
Preheat oven to 375 degrees F.
Stir about half of the dry cake mix, shortening, margarine and egg in a medium bowl until well mixed. Stir in remaining cake mix until smooth and well mixed.
Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 10-12 minutes or until light brown around edges.
Cool 1 minute on cookie sheet and then remove to cool completely. Frost the cookies with the lemon frosting and enjoy.
