Curled Ginger Thins

ingredients
2/3 cup all-purpose flour
1 teaspoon ground ginger
1/8 teaspoon salt
1/3 cup dark molasses
1/2 cup butter
1/2 cup firmly packed dark brown sugar
1 tablespoon fresh lemon juice
directions
Preheat the oven to 350 degrees F. Butter four cookie sheets. Butter a rolling pin.
Sift the flour, ginger and salt into a medium bowl.
Heat the molasses, butter and brown sugar in a small saucepan over low heat until the sugar has dissolved completely. Mix the molasses mixture into the dry ingredients. Stir in the lemon juice.
Drop teaspoons of the dough 3 inches apart onto the prepared cookie sheets. Do not bake more than 5 cookies on one sheet. Bake, one sheet at a time, for 8-10 minutes or until golden brown.
Cool on the sheets until the cookies firm slightly. Working quickly, use a spatula to lift each cookie off the sheet and drape it over the rolling pin. Let cool completely.
