ingredients
1 tub sugar free frozen non-dairy whipped topping
1 box sugar free fat free instant chocolate or chocolate fudge pudding mix, plus ingredients to prepare
1/2 cup dried flaked coconut, unsweetend
1 dash coconut extract (optional)
directions
Thaw the whipped topping 12 hours before preparing.
Prepare pudding as directed using fat free milk. Stir in 1/4 cup dried coconut and coconut extract. Let pudding set up in refrigerator for 10 minutes, the longer the better.
When pudding is well set, gently fold in all the whipped topping until a uniform color without white. Use less topping for a more intense chocolate taste and heavier consistency. Stir in remaining coconut.
Serve, garnish with more dried coconut if desired.
