ingredients
1 potato
2 tablespoons peanut butter
1 box confectioner's sugar
directions
Boil potato in skin until it is cooked through. Remove skin and mix potato with sugar.
Roll out potato mixture with a rolling pin. Spread with peanut butter. Roll up like a jelly roll.
Refrigerate then slice.
