ingredients

1/4 cup mashed potatoes
2 tablespoons milk
1 teaspoon vanilla extract
1 dash salt
1 box (1 pound size) powdered sugar
peanut butter

directions

Mix together all ingredients, except peanut butter. Add sugar until dough consistency.

Roll out onto powdered sugar dusted bread board or waxed paper.

Spread peanut butter all over. Roll it up like a jelly roll loaf.

Place in refrigerator to chill. Slice 1/4-inch thick.

    Could you use instant mashed potatoes for this recipe?

    • They should work ok, I'd recommend maybe making them with a little less liquid than called for to prepare them so they are denser.

    My dad use to make potato candy during the holidays when we were kids.... dad has past, but the memories of him in the kitchen making that candy is very real today....I've past it on to my grandchildren and friends...

    This is a wonderful recipe, my friend made it and it was delicious. I don't like mashed potatoes, but this was something else! I loved it!!! I have shared this recipe with many friends. you can also add melted chocolate on top! YUMMMMMMMMMMMM!!!!!!!!!!!!!!!!!!!!

    I'm 48 years old. When I was a kid I couldn't wait to get to my Aunt's on Christmas to eat this candy. Year's later I wanted to make it for my kids but didn't know what it was called. After finding the recipe and making it one year, now my kids and all their friends can't wait until Christmas so I'll make mashed potato candy. It's one of those recipes you'll pass down for generations.
