Arbor Cafe Cashew Chicken Pate

ingredients
1 medium yellow onion
1/2 cup unsalted butter
1 pound chicken breast, chopped
1/4 cup basil
1/2 cup roasted cashews
1/4 cup brandy
1/4 cup mayonnaise
1/2 cup Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
directions
Saute onion and check in the butter over medium-high heat. Deglaze the pan with brandy and reduce by half. Remove from heat and add cashews. Cool the mixture completely.
In a food processor, add remaining ingredients and process to a smooth, creamy texture. Serve on baguette slices or toast points.
