Haddock With Herb Stuffing

ingredients
1/8 teaspoon black pepper
1/8 teaspoon dried tarragon leaves
1/8 teaspoon dried rosemary leaves
2 pounds haddock fillets
3 tablespoons lemon juice
3 tomatoes, sliced 1/4-inch thick
3 tablespoons butter or margarine
1/2 cup chopped onion
1/2 cup chopped celery
1 can (3 ounce size) chopped mushrooms, drained
OR
1/2 cup chopped fresh mushrooms
2 cups day-old soft bread crumbs
1 teaspoon salt
directions
Preheat oven to 350 degrees F. Lightly grease a large, shallow baking dish.
In hot butter in saucepan, saute onion, celery and mushrooms until onion is golden, about 5 minutes.
In a large bowl, toss sauteed vegetables with bread crumbs, salt, pepper, tarragon and rosemary until well mixed.
Wash fillets and dry well on paper towels. Arrange in a single layer in a baking dish. Sprinkle with lemon juice.
Spread herb stuffing over fish. Then add a layer of sliced tomatoes. Bake uncovered for 35 to 40 minutes or until fish is easily flaked with fork.
Serve right from baking dish.
