1 package three-cheese or other tortellini
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 1/2 tablespoon extra virgin olive oil
1 small onion, chopped
1 clove garlic, minced
salt, to taste
black pepper, to taste
1/4 cup romano cheese
1 tablespoon chopped parsley
Cook and drain pasta as directed on package.
While pasta cooks, stem and clean seeds from peppers and dice them. Heat olive oil in heavy bottomed skillet. Saute chopped onion and garlic for 3 minutes. Add diced peppers and cook about 8 minutes, until they are mostly cooked but still crunchy. Season with salt and pepper. Remove skillet from heat. Add well-drained tortellini to the skillet.
CAUTION: Make sure pepper and oil mixture has cooled a bit so it doesn't splatter.
Mix tortellini into peppers and heat through. Sprinkle with grated Romano cheese and chopped parsley and serve.

I used spinach cheese tortellini and Parmesan cheese because it's what I had on hand. My family loved it. I found myself wanting a little more sauciness. But all in all a quick dinner using ingredients I had already.

This is an excellent recipe and very simple to make. I use parmesan cheese instead of romano only because I usually have parmesan on hand. The combination of the colored peppers is very pretty and I use a tricolor tortellini too.

I made this one time a really long time ago and it was fantastic then. It still is now! Only change that I made was add some alfredo sauce. I love it and will be making it again and again!
