2 large Yukon Gold potatoes, peeled
1/4 cup olive oil
1 tablespoon unsalted butter
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Bring a large pot of water to a boil over medium-high heat.
Meanwhile, cut the potatoes into balls using a large melon baller (plan on 8 per serving). Set the potatoes aside until they are all cut then add them to the boiling water.
Cook the potatoes for 8-10 minutes or until they are just tender. Drain the potatoes well and spread out on a baking sheet or platter to dry out.
Heat the oil in a skillet over medium heat. Add the potatoes and cook for 6-8 minutes, turning the potatoes as needed to brown on all sides.
Add the butter, salt, and pepper. Mix gently to coat the potatoes in the butter and cook for 1 minute. Serve the Parisian potatoes hot.
