4 tablespoons onion, minced or chopped
2 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon black pepper
8 medium potatoes, scrubbed and sliced
1 package (8 ounce size) cream cheese, cut into cubes
4 slices bacon, cooked golden brown and crispy, crumbled
Lightly grease crockpot. In small bowl, combine onion, garlic, salt and pepper.
Layer one-quarter of sliced potatoes in bottom of crockpot. Sprinkle with one-quarter of seasonings. Layer with one-third of cream cheese cubes and bacon. Continue layering process, ending with layer of potatoes then sprinkle with seasonings.
Cover and cook on high 3 to 4 hours. In last hour of cooking, stir potatoes to distribute cream cheese and bacon.
