2 pounds ham, chopped
5 pounds potatoes, sliced thinly (peeled if desired)
3 cans (22.6 ounce size) cream of mushroom soup
8 ounces freshly shredded mozzarella cheese
8 ounces freshly shredded Colby jack cheese
8 ounces freshly shredded cheddar cheese

directions

Preheat the oven to 350 degrees F. Grease 2 large cake pans.

Combine the cream of mushroom soup, Mozzarella cheese, Colby Jack cheese, and Cheddar cheese in a bowl.

Layer the sliced potatoes, chopped ham, and soup alternately in the cake pans, ending with the soup mixture.

Place the ham and potato mixture in the oven and bake at 350 degrees for 1 hour or until the top is golden brown and is bubbly.

Serve the ham and potato casseroles hot.

    I made this recipe when we had a house full of company one weekend. I didn't have the cream of mushroom soup, only cream of potato, which seemed to work fine. It was perfect for breakfast / brunch.
