Grated potato and onion with egg and matzo meal make a classic side dish that's crunchy on top, creamy in the middle.

6 medium potatoes
1 large onion
2 eggs, lightly beaten
3 tablespoons matzo meal or flour
1/4 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon baking powder
3 teaspoons chicken fat (optional)
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
Peel the potatoes and onion. Grate them onto paper toweling. Squeeze out any excess liquid and transfer the potatoes and onion to a large bowl.
Add the eggs, matzo meal, black pepper, salt, and baking powder to the bowl and mix well to combine. Transfer the mixture to the greased baking dish. Dot the top of the kugel with chicken fat, if desired.
Place the baking dish in the oven and bake at 350 degrees F for 40-50 minutes, or until the top of the kugel is crispy and golden brown.
Serve hot, at room temperature, or chilled.

Made this recipe for dinner last night, left out the chicken fat, and it was absolutely delicious. Instead of the chicken fat used margarine and it came out great. My husband loved it, as well, and asked me to make it again. Made it in a casserole dish, and we devoured 3/4 of the dish. Thank you so much for the recipe! Surely a keeper!
